Ingredients
  
  • cups mixed dried fruits
  • ½ cup dark rum
  • 1 cup butter
  • 1 cup brown sugar
  • 3 eggs
  • cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • ½ tsp nutmeg
  • 1 tsp vanilla essence
  • A pinch of salt
Method
 
  1. Soak the dried fruits in rum overnight. The longer they sit, the stronger the flavour.
  2. Cream butter and brown sugar until pale and fluffy.
  3. Add eggs one at a time, mixing gently.
  4. Fold in flour, baking powder, spices, and salt.
  5. Add the soaked fruits and mix just enough to combine.
  6. Bake at 160°C for about 90 minutes.
  7. Once cooled, lightly brush the top with extra rum if you prefer a stronger finish.
